From experience, I will vouch that using an HDMI cable has made a huge difference in my situation... but I don't think this is due to the HDMI cable providing that much of a noticable difference from a technological perspective, but rather that the component video inputs on my TV are sub-par. I currently have an Envision 32" LCD TV, which is capable of 720P maximum, but will interpret 1080i signals.
Everything I have ever connected to the component video inputs (including an XBOX 360, Wii, Mitsubishi progessive scan DVD player, and an EVA 8000) has looked poor.
When I tried the EVA8000 and XBOX 360 on HDMI, they look absolutely gorgeous, leading me to the conclusion that the component video inputs on my TV are not very well done.
So to conclude, I think your mileage may vary depending on the devices used and the inputs on your television. I would imagine that its much less of an issue with higher-grade televisions.
I'd love to hear input from some other folks as to the technical aspects of HDMI vs. Component and some real world comparisons with higher-grade TV's (i.e., not mine!)
